Yulisa Ester Carhuallocllo and her husband Jeremías Chinguel Huancas farm in the Corazón de Chirinos area of northern Peru, on a property they named La Miel after the bees they keep, which pollinate the coffee and the guava, vituca, and orange trees growing around it. She placed 5th in Peru's 2025 Cup of Excellence, which is the result of a deliberate, unglamorous approach: improve quality and value through better agronomy and tighter post-harvest control, worked on year after year until it compounds into something.
Varieties are Bourbon and Caturra with smaller Geisha plantings. Processing is washed — depulped, fermented, washed clean, then dried slowly on raised beds over one to two weeks, because slow drying is how they protect cup quality and shelf life on the way to the consumer. Finished lots go to Jaén for assessment before export, with microlot pricing set against the evaluated cup score at a premium above local market levels.
La Miel is our first direct relationship. For the 2026 harvest we've committed to Yulisa's full blend volume plus additional microlots, and we're planning to buy more as she works toward her longer goal of building a roasted coffee brand to sell locally, with the hope that paying fair prices at real volume provides some stability for her operation and, honestly, for ours too.

Shipping policy.
We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.
Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.
All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.
Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.
Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.
Can you grind my coffee for me?
Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
