About Pastime

Pastime coffee roasting and equipment service is the home of long-time coffee professional, Justin Dedini. Justin has been in the specialty coffee industry over 20 years and has experience as a roaster, equipment tech, green coffee buyer, quality assurance manager, and general manager. In recent years he’s proudly honed his skills at Heart Roasters, Roseline Coffee, and Water Avenue Coffee in Portland Oregon. 

Pastime was started with the goal of crafting the company that we’ve always wanted to work with. As a foundation, this means treating our partners, producers, and suppliers with kindness and respect. We believe in offering the best quality coffee possible through paying producers well above average, sourcing exceptional coffee, roasting at a world class level with a focus on consistency, and keeping our environmental impact to a minimum.

Green Coffee Buying and Supply Chain Social Responsibility

We recognize that the coffee supply chain has strong roots in colonialism and it is our responsibility as coffee buyers to establish buying practices that ensure economic stability for coffee producers. The best way to support producers economically it is to buy the entirety of a given producers coffee at excellent prices. Given that we are a micro-roaster we are not yet able to buy in this way. Instead we lean on a select group of green coffee importers who treat producers with respect through building long term relationships to do the work for us. Often seen as middle men these importers are an important piece of the coffee supply chain. They are able to push the volume necessary to buy a vast quantity of a producers or cooperatives production at prices far exceeding the minimums set by Fair Trade pricing. This relationship allows us to acquire incredible coffees from producers who have been paid fairly for their work. 


Pastime is committed to providing transparency reporting for all of the coffees we buy to back up our claims and build the trust of our customer base. You can expect to see our first transparency report in January 2025.

Environmental Sustainability

Pastime is committed to producing coffee in the most sustainable way possible. The coffee supply chain is one that is inherently environmentally taxing. High quality coffee is grown in countries that are half way around the world (or more), shipped by boat or by plane, trucked from a warehouse, roasted on energy hungry equipment, packaged and shipped again to homes around the country. We can mitigate our impact by making conscious decision at every junction along the coffee supply chain. Here is a working list of ways we are  attempting to become as environmentally sustainable as possible:

  • We work with producers who focus on using organic and sustainable farming practices. While most of the producers we buy coffee from are not certified organic due to the high certification costs, they are utilizing regenerative farming methods that give back to the surrounding ecosystem.
  • We choose to only ship coffee from origin by boat. This allows large quantities of coffee to be shipped at once and greatly reduces the carbon footprint. 
  • We purchase carbon offsets for all of our freight and retail coffee shipments. 
  • We roast on a Loring recirculating air roaster. Not only do Loring roasters produce extremely clean and well developed coffees but the energy recirculation saves up to 80% on energy consumption over traditional drum roasters.
  • The jute coffee sacks used to ship green coffee are donated to gardeners around the city to reuse as weed suppression. 
  • We have chosen to limit our sales to the USA.
  • Our roasted coffee packaging is completely compostable in our 10oz and 2lb sizes and our 5lb bags are recyclable.  We also have a reusable container program for our wholesale partners so to save packaging material on their bulk coffee purchases. This saves an estimated 50 5lb bags per week - and growing!

Menu Building and Roasting Style

We are committed to having a coffee menu that highlights the exceptional skill of our producers and our roasting practice. Our coffee menu is crafted of exclusively high scoring and seasonally fresh coffees with a clean flavor profile indicative of terroir. Most of our coffees feature fully washed processing methods. Occasionally we do find exceptional natural (dry) or anaerobic processed coffees that offer flavors that complement terroir and showcase the producers mastery of their processing techniques.

All of our single origin coffees are roasted as lightly as possible on a Loring air roaster while ensuring full flavor development. Some people refer to this as a “nordic” style roast.  We find that our coffee is at its best between 15 and 45 days after roasting and recommend that you rest the coffee at least 7 days after roasting before brewing for best results. 

Our blends are sourced and roasted with a consistent flavor profile and brewing method in mind. We source the same high quality and seasonally fresh single origin coffee for our blends but roast them a little longer to make them easy to work with for any brewing method. Service and Community

The thing that we believe sets Pastime apart and the main focus of our business is service. We believe that coffee is inherently a people business and building relationships in our community is an essential part of our coffee enjoyment. Whether it is providing free equipment maintenance and repair to our wholesale partners, helping retail customers dial in their home setup or helping other roasters get the most out of their roasting program; we find real joy in sharing in our professional and personal experiences.
