Our latest selection, an impeccable Gesha lot from producer Victor Bermudez, is an ideal choice for the occasion. This coffee features a delicate, floral, and immaculate flavor profile that truly stands out. It is a refined option for those who appreciate a clean and pristine tasting experience.

Victor’s story begins far from the coffee fields of San Adolfo. Born and raised in Pitalito, Victor studied law in Bogotá and practiced until 2020, when the pandemic disrupted his plans for a postgraduate degree in Sweden. Returning to his family’s farm, Finca Buenos Aires, what began as a temporary refuge soon became a full-time calling.

The farm was originally purchased by Victor’s grandfather, Enrique Motta, in 1970. Today, it is managed by Victor’s uncle, Jairo, an agronomist and community leader who has been instrumental in Victor’s development. Jairo provided Victor the space to experiment with new processes and varieties, allowing him to transform the property into a center for specialty coffee.

Finca Buenos Aires spans 13 hectares, with nine dedicated to coffee. The farm cultivates over 45,000 trees—including Castillo, Colombia, Gesha, Caturra Chiroso, Sidra, Arara, Maragesha, and Parainema—shaded by 5,000 pink cedar trees and banana plants. The team also maintains crops of plantain, cassava, and beans for local consumption.

Despite his background in law, Victor has applied a methodical approach to agriculture. Since 2022, he has completed SENA courses in roasting and cupping and earned an SCA Intermediate Sensory Analysis certification—an achievement he notes excited him more than graduating from law school.

For this Gesha lot, cherries are carefully harvested over three days. Victor combines the fresh harvest with cherries that began fermenting one and two days prior. The cherries are floated to remove defects, de-pulping follows, and the coffee is then submerged in water in sealed containers for a three-day fermentation. Finally, the coffee is washed twice and dried slowly over 15–20 days. Victor continues to refine his methods, using pH meters to ensure consistency. He adjusts fermentation times to highlight specific varietal characteristics, keeping fermentations short for the Gesha to preserve floral complexity.

Shipping policy.

We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.

Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.

All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.

Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.

Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.

Can you grind my coffee for me?

Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
