Nelson is a quality focused farmer committed to sustainable practices, focusing on reducing chemical inputs to improve his farm's health. He's also a trained cupper with the National Training Service (SENA), which makes him confident and proud of his coffee's quality. His farm, Finca Vegas del Chuscal, is named after a local bamboo-like plant. Besides coffee, he grows various fruits like peaches and passion fruit, and diversifies his income by raising pigs and farming fish (tilapia, catfish, and tambaqui).

Nelson's main challenge in processing is the limited drying area on his farm, which is highly dependent on weather conditions. He plans to build more canopy dryers with polycarbonate roofs to withstand winds, which have previously damaged his drying structures. To further enhance his economic stability, he's also looking to diversify into other crops, particularly more fruit trees. He takes great pride in being a coffee producer, and it brings him joy to see buyers recognize and prefer his coffee.

Nelson is particularly careful with his processing methods. Nelson has integrated an eco-pulper and a stainless steel tank, provided by a government organization, into his operations. Leveraging his cupping expertise, he's found that an in-cherry fermentation step causes Gesha to lose its floral notes and become too fruity. Therefore, for Gesha lots, he carefully picks ripe cherries, immediately depulps them using the eco-pulper, and then ferments the seeds in a sealed stainless steel tank for approximately 20 hours. Afterward, the coffee is washed in the eco-pulper, briefly dried on his patio, and then moved to a large canopy bed with a plastic roof for 15-30 days until fully dry. The parchment is stored in grain pro bags at his home to maintain stable humidity levels.

We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.

Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.

All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.

Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.

Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.

Can you grind my coffee for me?

Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
