Process: Mechanically depulped, washed.

Nano Genji is sourced from 819 smallholder farmers in Ethiopia’s Agaro region, located in the Jimma zone of Oromia. These are the earliest Ethiopian coffees we bring in each year, with the harvest occurring in January and the first shipments arriving as early as March. Their early arrival is due to Western Ethiopia's earlier growing season rather than an early harvest.

While most coffees reach the height of their flavor potential a few weeks or months after arrival, coffee from Agaro is unique. They continue to open up for more than six months and maintain their peak flavor for an exceptionally long period. Because they are both the first to arrive and benefit the most from this resting period, we intentionally hold them in our warehouse until February to ensure they are added to our menu at their absolute flavor peak. This practice is something we wouldn't dare do with coffee from other areas of the world.

At the Nano Genji washing station, the coffees are washed and mechanically de-pulped before being soaked overnight. Following fermentation, the coffee is dried on raised beds for six to eight hours a day over a period of six to eight days, with frequent turning to ensure even drying.

Shipping policy.

We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.

Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.

All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.

Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.

Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.

Can you grind my coffee for me?

Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
