Ethiopia's Yirgacheffe region is renowned for its coffee production, with distinct terroirs found in its woredas (districts) and kebeles (communities). One such kebele is Gotiti, located within the Gedeb woreda.

Farmers in Gotiti transport their coffee by mule or on foot to the local washing station, which began operations in 2023 on 2.5 hectares of land. This station processes an annual volume of 500–600 tons of clean green coffee, with 868 farmers delivering cherries. They meticulously wash, pulp, ferment, and dry their coffees, ensuring a superb final product. After processing, the coffee is safely stored to preserve parchment quality until it's moved to the dry mill. Fully dried parchment is then packed in bags or bulked in conditioning bins.

To maintain traceability and quality, the washing station carefully separates lots. They record the supplier's name, original location, and quantity of coffee cherries, and maintain thorough records throughout the processing.

The people of Gotiti are part of the Gedeo cultural tradition and speak various Gedeo dialects. Coffee is their primary income source, cultivated on small farms ranging from 0.1 to 2 hectares. Many intercrop with false banana trees and acacias, which provide shade and enrich the soil with nitrogen.

Despite challenges, Gotiti producers benefit from their beautiful, communal village within a lush forest. The forest, altitude, and indigenous coffee varieties create an ideal environment for smaller, flavorful beans with distinct, elegant, and floral profiles.

Shipping policy.

We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.

Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.

All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.

Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.

Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.

Can you grind my coffee for me?

Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
