Guji Goro is our first Ethiopian new crop of 2026 and we couldn't be more pleased with this first offering. Goro washing station has been running since 2013 and came under its current ownership in 2020, when Habtamu Fekadu Aga took over. A Penagos pulping machine went in two years later, which matters more than it sounds because it produces considerably more consistent lots than older equipment tends to. Water comes from a deep gravel rock well, and they treat wastewater by pH before disposing of it rather than running it back into the surrounding land.

Farmers supplying the station get agronomy training covering organic practices, shade growing, and regenerative approaches, and the station is involved in renovating the nearby elementary school. They offer interest-free advance payment before harvest and will collect cherry directly.

The processing is washed with a bit of texture left in. Sorting and pulping leave roughly ten percent mucilage on the bean, which ferments for 24 hours before the coffee is hand washed and moved to raised drying beds. It stays out of direct sunlight, gets turned every few hours, and workers measure moisture and pull defects throughout. Nine to twelve days later it's bagged and stored. The station receives around 900 tonnes of red cherry annually and converts that down to about 153 tonnes of parchment, with two quality control managers tracking moisture and timing throughout.

The flavors in the cup are bright and refined, with a velvety mouthfeel and a complex fruity quality that moves between melon and stonefruit.

Shipping policy.

We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.

Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.

All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.

Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.

Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.

Can you grind my coffee for me?

Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
