Elder, a teacher by profession and coffee producer by passion, inherited his first plot from his father, who was one of the first coffee cultivators in the region. Elder has continued this pioneering spirit by being one of the few in the area to process his own cherry into parchment. He even brings his de-pulper to the municipal wet mill to utilize their infrastructure.

In 2024, Elder established a small cooperative called La Sierra de las Minas, which currently has 44 producers, with 10 farms in production and the rest awaiting their seedlings to yield more volume.

Coffee production for Elder is a family endeavor. To meet our minimum purchase of 10 qq of parchment, he processed coffee from his own plots, as well as from his father, brother, and father-in-law. His wife, Marlyn, meticulously records lot and drying details, and their eleven-year-old child, the eldest of three, plays a key role in managing the drying process. This year, Elder's washed coffee lot earned him 7th place in Guatemala’s Cup of Excellence.

Elder's farm management practices are highly sustainable. He grows coffee under diverse shade trees like kuje, gravilea, cedar, pine, avocado, and citrus. He interplants with banana, cardamom, lemon, and níspero to diversify income and improve soil health, and he intentionally maintains ground cover to retain soil moisture. He prioritizes the tree canopy, soil health, and biodiversity, with a long-term vision of building a solar dryer, upgrading equipment, and expanding his nurseries.

Regarding processing, Elder and his family pick ripe cherries on the same day and transport them directly to the municipal wet mill for de-pulping. The coffee then ferments in open tanks without water for 30-48 hours before being washed in the mill's channels to remove under- and over-ripe cherries. The coffee is then left to drip dry on the patio, or at his house or his wife's family's home, depending on space availability.

This is the first crop Elder has ever exported to the US and we are pleased to establish this new relationship with an outstanding up an coming coffee producer!

Shipping policy.

We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.

Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.

All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.

Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.

Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.

Can you grind my coffee for me?

Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
