Kubi is a small sub-kebele of Worka Chelbessa, in Gedeb woreda, Ethiopia's Gedeo zone, and sits directly across from the Danche washing station. Cherry from Kubi gets carried across and processed at Danche.

Despite the similarities, Kubi expresses a distinct flavor expression compared to lots sold as Danche. This is due to the shade cover on the farms in Kubi, which is heavier than most of what's around it. In addition, the growers there are hyper-diligent about picking only ripe cherry. That's why the exporter and site owner, SNAP, has started pulling Kubi out as its own lot instead of folding it into the lots we know and love as Danche.

The processing at Danche is straightforward: cherry gets floated, pulped, and fermented underwater for 36 to 48 hours, then dried on raised beds for 10 to 14 days. The trees are a mix of local landrace and the JARC selections you find all over Gedeo, mainly 74110 and 74158. Farms in this part of Gedeb run small, 1.5 to 2 hectares, and coffee itself is a fairly recent crop here. Most of these farms have only been growing it for a generation or two.

We purchase our Kubi, Chelbessa, and Danche lots through Amanuel Negussie at SNAP, the son of Neguesse Debela, who owns the mill and exporting company. Neguesse built the Danche station in 2019 and runs it with his family.

Shipping policy.

We roast all orders on Tuesday and Thursday. Orders placed after 4:30am PST on Tuesday or Thursday will be shipped on the following roast day.

Please select a secure delivery address to send your coffee. All packages are shipped with insurance; however, this does not cover packages that have gone missing after they are marked as delivered by the carrier. Pastime Coffee is not responsible for packages that are lost or stolen.

Roasting style.

All of our single-origin coffees are roasted as lightly as possible while ensuring full flavor development, clarity, and highlighting terroir.

Our blends, 4:30am and Sure Thing offer a variety of roasting styles and are engineered for consistency and reliability. Please visit those products for more information on those specific roasting styles.

Please note that our coffee should be rested for at least 7 days after roasting to achieve optimal results.

Can you grind my coffee for me?

Yes! All orders are shipped whole bean by default. If you need us to grind your order, please let us know in the notes section at checkout. Don't forget to also add your brew method so we get the grind size correct.
