La Lima’s 1,800 masl position in San Ignacio, right up near the Ecuadorian border is ideal for quality coffee production.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cspan class=\"s1\"\u003eThe processing is washed, though with a short in-cherry fermentation step first: cherries go into sealed bags for 12 hours before de-pulping, which is skillfully executed to add some complexity to the flavor profile without overpowering the coffees naturally occurring flavor expression. In the cup these flavors read as lemongrass and apricot, with panela sweetness and a rose like floral finish.
